Dan, your list of things to do is short and I know it can’t be long.
In terms of time in Sydney the real jewel in the Sydney basin is a region called Northern Beaches. The southern end is Manly, easily reached by ferry from the city and that’s a great place to start to explore the northern beaches, which BTW, is a coastal area with over 20 sandy surf beaches.
Manly itself can be a day trip and even if you don’t go further north, I can guarantee you’ll love Manly.
